So far as I can tell, it's impossible to pair an R7 to a Mac because the EOS utility is ancient. A Canon "product expert" posted in 2023 that Canon was working on it. It's mid-2025.
Now I'm going to offer a mea culpa. The VPN on the Mac, turned on because I'm presently out of the US, interfered with the pairing. VPNs can cause a lot of problems and I should have realized it was active.
In the end, with EOS Utility 3.19.0 I tried pairing the camera to the Mac a half-dozen times on the same wifi network and it failed each time, so I won't spend another minute thinking about it.
