We are considering getting 4 of the C50’s for our video productions. Currently we are using an R1, R5 and R6’s which can all be started/stopped via remote. Since the C50 runs on cinema OS we would have to use the Multi-Camera app (as far as I can tell) but we cannot rely on WiFi at shoots. Is it possible to connect all 4 of the C50’s using only their internal WiFi signal to start/stop recordings or will that only work for 1 at a time?

Per review, the Multi-Camera Control app on a mobile device will allow for users to control multiple EOS C50 cameras that are connected to the same network as the mobile device via Wi-Fi and with using the camera's internal Wi-Fi feature. When connecting multiple cameras, we would suggest on using the 5 GHz band. You may review more information about this feature on page 186 of the camera's user guide.
