I have a c300 with older firmware. Is it safe to update to the newest firmware or update it one at a time. I am at firmware 1.04.11

The firmware instructions will outline the requirements. i.e. what firmware version you'll need to be at in order to apply the new update. Generally, one can skip versions, but see the instructions to be sure.

On the page where you download the firmware update for a camera or lens, there is usually a DRIVERS/SOFTWARE DETAILS link near the download that lists what the most recent firmware update addresses.
Here's what the latest firmware update for the EOS C300 Mark II addresses:
1. Compatible with EF Cinema Lens CN 10 x 25 IAS S/E1.
- Peripheral illumination / chromatic aberration correction has been added.
- Enable autofocus with Dual Pixel CMOS AF.
- Added support for "Dual Pixel Focus Guide" feature.
2.The default setting for [Custom Display 2] > [Resolution/Color Sampling] has been set to ON.
