I just tried with my wife's camera, which has never been connected to the MacBook before.
When I connected and powered camera on this appeared:
When I selected Allow the window closed.
Then I selected EOS Utility and EOSU3 started up:
When I then tried connecting my 1D X Mark III, which had been connected before (but before he latest macOS update) I got the same authorization request.
EOSU3 will start, but I get the beachball. Looks like something broke.

Update - it just took a while. EOSU3 does see my camera. I think the delay was reading my cards:
