My current setup is a Canon T6i, and im sending the image to my PC through a HDMI and a capture card to be recorded using OBS. I tried all the best setting I could find, but the video quality is visibly inferior to the one I can get with the camera alone.

I was able to review the screenshots from the link you have provided, and it does show that the video from what is recorded on the camera is sharper and looks nicer than the screenshot from OBS.
Check to see if it may be the capture device that the camera is connected to that may be encoding the video signal at a certain quality level that is having the footage look not as good as it does compared to the recorded video on the camera. One way to test this is to playback the recorded video from the camera directly while the camera is connected to the capture device. This way, you can see if the high-quality recorded video on the camera plays back through the capture device at the same quality as live video.
