Please correct me if any of what I say is incorrect.
I believe that when images are uploaded via Camera Connect on iOS, they are added to Photos. Then they go from Photos to Canon’s cloud. And then potentially to your home server. I don’t want all of the images and videos from my camera going to Photos. The big issue is Photos consumes iCloud space but even if it didn’t, it still isn’t where I want all of the images I take with my cameras. And, as far as I know, there isn’t an easy way to select all of them and delete them.

I use Photos as a "pass through" i.e. the pictures go there, I archive them elsewhere redundantly--i.e. two ways--and then dump what's in Photos.

This workflow sounds like it includes an unneeded extra step. Canon connect will send images directly from the camera to Apple photos. iOS allows RAW. They can go directly from photos to your server. Where does image. canon fit into your workflow?
Any automatic downloader is going to act as a pass-through for your images, iCloud PD, photo sync, etc. If you don't want them passing through a third party, (including iCloud Photos, you need to download them yourself.

I do. I pull the card out and plug it into my computer and let LrC pull them off the card and into my catalog. Especially with the EOS R5C, this was the only way to make sure I got all of the info that I wanted. As you probably know, there are other files besides the videos and photo images that can sometimes be useful.
