Image format CCITT G4 - How to set up CaptureOnTouch - R40

I have an R40 scanner. I would like to save scanned documents, in CCITT G4 ("fax") format (I have been doing it with the older Canon scanners).
Ho can I do it (namely, set up the CaptureOnTouch software?
