Is there a way to properly do Timelapses on the C500MII, and if not, why was this feature not included when it was included in previous models of Canon cinema cameras?
From what I can see the only way to do a Timelapse is setting the FPS to 12 and let it roll. I would like a proper intevelometer function of even less frame rate options with a slower shutter speed to achieve Timelapses.

The EOS C500 Mark II does not include a time-lapse or intervalometer function as per how the camera was designed by our engineers and product designers in Japan. In the meantime, I have submitted your feedback regarding this function. Consumer demand, technological limitations, and customer feedback are all taken into consideration.
