I may be addressing a problem everyone has solved, but I'll post this anyway, just in case.
After upgrading to Big Sur, my Pro-100 print dialog window was missing many of the specification options I'd used under Catalina, such as paper type, paper sizes, colorsync ICCs, etc.
Later I noticed that in my printer selection window (I use Affinity Photo) a new Pro100 priner was shown, specifically "Pro-100 series 2."
I set the new printer selection as my default, ran some test prints. Evertthing worked properly.
Selecting this printer restored all the features I had under Catalina.
