My Powershot G7X Mark II had saltwater damage. I managed to get it working again (freshwater and sat in rice) but a few days later it completely died. What are my options? I don't think it can be repaired, but is it worth a shot? Is there a way I can sell it back to Canon for parts?

Throw it away. None of the parts can be trusted. And it would be unethical to part it out if you don't disclose the salt-water damage.
