I can set my metering, but every time the camera shuts off it goes back to "evaluative".  Is there a way to lock the settings so that spot metering can stay on until I change it?

Hi JackieL.

I have the same issue with the SX150 and the G12, although if I leave the cameras in center weighted metering, that seems to stay even after the camera is turned off and back on.At least with the G12 I have two custom setups that I can set to have my most used settings. Pretty frustrating because my old A510 holds the spot metering just fine.

If I come across a solution I'll be sure to let you know.

This is normal for this camera.  The PowerShot SX260 HS does not retain the metering settings when you turn it off.
