Well I was finally able to solve one issue with performing bulb exposures without physically touching he camera using the Canon BT remote BR-E1 and have now discovered that apparently bulb exposures are limited to 4:16 or 256 seconds. I also tried a bulb exposure by holding the shutter button as the manual states on page #95 "With bulb exposures, shots are exposed for as long as you hold down the shutter button." I also tried setting the shutter mode to electronic with the same result. It appears that this has been an issue since at least 2020 from an old post at DPREVIEW here: https://www.dpreview.com/forums/thread/4484929
I hope Canon is monitoring this forum and provides a firmware update to remove this limitation. Some of my bulb exposures with my T5i exceed 8 minutes so pun intended "Time is of the essence."

Look what I came across while searching at Canon, it's for the G7x and G9x Mark II and they share the same "DNA". I will assume the G5x Mark II is no different until I hear back from Canon.

If you haven’t already, do provide your feedback to Canon by visiting the main Canon USA page, then clicking on “[+] Feedback” which is at the page’s bottom next to the copyright notice.
The value of 256 is interesting as that’s the maximum value storable in one byte (assuming you start at one instead of zero). Hopefully that value is not limited to a single byte, and can thus have its maximum value be increased.
