Will it work? I have an EOS RP, Canon 70-200 2.8 EF lens, which I use a converter to attach to the camera, would a 2x extender work?
I recall reading that the 2x extender didn't work with the EOS RP because the lens needed to extend into the camera's body, and there wasn't enough room with an adaptor, extender, and lens.

EF lens mounts on the Canon EF-R lens adapter. Nothing extends into the R camera body. The Canon extender will mount on the lens and then mount on the adapter. The Canon extender has a “nose” that extends into the lens body. That is why the Canon extenders can only be used with canon L lenses. Image quality could take a hit; you can judge that.

That's what I read online. Since I'm shooting outside baseball, I'm unsure if that's a big issue, but I'm spoiled with the 2.8 lens.

Yes, I'm seeing 2.8L now. I was hoping for solution, but I have not seen one.

Nope, just read the spec as the name is misleading.
This lens is only compatible with fixed focal length L-series lenses 135mm and over, as well as the EF 70-200/2.8L, EF 70-200/2.8L IS, EF 70-200/4L, and EF 100-400/4.5-5.6L. Additionally, please see the lens and/or camera body manual for full compatibility information with the Extender EF 2X III.

I have both the EF70-200 f/2.8L II and the EF100-400 f/4.5-5.6L II. Also have the EF 1.4X III and EF 2.0 III. I get better results with the 1.4X and cropping.
