I have my camera set up for dual back button focus.
The * button is programmed to Eye Tracking Focusing.
The AF ON button is set to Servo Focus, where I select a focus point.
I want to be able to override my Eye Tracking when I need to specifically focus on something that is not an eye.
For example, I shoot newborns. Sometimes, I want to focus on the baby's nose, but the camera will not let me override the eye tracking.
How do I program my camera to achieve this method of focusing!?

This seems like you want to have a quick way to switch between focusing on the eye and choosing to focus on something that is not an eye. Since you mentioned eye tracking specifically then I assume you have a mirrorless camera, but the solution does vary depending on which model.
For the EOS R5/R6 you can configure the AF-ON button to activate servo AF and either use the current AF method, or override it while the button is pressed. You can also configure the * button to do metering and AF start but have it force a switch to face detection with eye tracking AF.
Similar is possible with EOS R3, EOS R7, EOS R8 and EOS R6 Mark II, but you do need to check the details of the metering and AF start button by pressing the INFO button to gain access to the second level of settings.
Below are some screen grabs from the menu of EOS R6 Mark II to show the depth of settings that can be switched. If there is a check mark in the first column then the setting is applied, no check mark and the cameras active settings will be used. Similar capability exists in the EOS R5/R6 but it is more limited.
