Howdy, I am new to the Canon ecosystem. I am sure this is an easy setting but would like some input. Would like to lock the F stop and speed and let the ISO vary. Any suggestions? Thanks and sorry if its an easy question.

It is not an easy setting.
However, Ken Rockwell says that the R7 will do it in Fv mode:

You can use manual exposure mode, M on the mode dial, and then select the aperture and shutter speed you want, but leave ISO set to AUTO ISO.
If you really want to lock the shutter speed and aperture values, then use the multifunction lock and configure it to lock the main and quick control 1 dials. This will then stop you changing the shutter speed and aperture while the lock is active. Lock iOS the middle position on the power switch.
