Hello,
My 7D Mark II is unable to shoot in burst mode and stop at 1 picture taken (+ raw one and hdr ones).
I'm new to photography, this is my setup, can anyone tell me where I did wrong please?

What are you trying to accomplish? Are you trying to rapidly capture several HDR images? I don't know if that's possible in looking at the User Manual.
The manual does have notes on if doing white balance bracketing that the maximum burst rate will be lower (page 174). But I don't see any notes for HDR. Also, per your screenshot above of the rear display, I don't see the estimated burst mode value being displayed (lower right corner). Thus, it could be that when in HDR mode, you're limited to single shots.

Especially if this HDR mode takes three shots in succession and combines them in camera.

It was that. The camera can't shoot in burst mode with HDR on.
