EOS 6D Mark II How to disable GPS and Wi-Fi

I'm looking to buy a professional camera and I found this one:

But can the GPS or Wi-fi be disabled permanently and entirely?

Is there a similar model with no GPS or Wi-fi?

Does Canon carry ANY professional grade cameras that don't have GPS or Wi-fi?

Don't know what you mean by "permanently and entirely", but you can turn off WiFi and GPS. Simple. You choose whether to enable them.
