For the R5, R5m2, and R1 there is low speed continuous, high speed continuous, and high speed continuous+. The plus makes me think that there is a difference beside frame rate. Other than frame rate, and is the difference between high speed continuous and high speed continuous plus?

It is which shutter they use.
I believe low speed uses the mechanical shutter.

With HighSpeed+ there may be additional compromises. For example the EOS R5 and R6 reduce the captured bit depth by 1-bit when shooting in high speed +.
