OK, good, you mean you are able to do set-ups not actually event races or full action games? If that is the case and you are allowed to do the setup and have access to any point you want to shoot from I think what you have will work. One more thing is this outside in the daylight? That is best.
Here is how I do these and BTW, they are usually called 'promos'. Do you have a laptop? If yes tether the Rebel T7 to it so you can really tell if what you are shooting is what you and they want. Its far better than just the rather tiny LCD screen on the T7. You will need either Lightroom or one of the free Canon utilities like DPP4. To tether using Canon's DPP4 software, connect your Rebel to your laptop with a USB cable, open DPP4, and then navigate to the "Remote Shooting" function in DPP4. You can control your camera and settings and capture images directly to your computer screen.
Next make sure you use raw and not jpg. Use One Shot not Ai-servo. Start with P mode and sert ISO pretty high say 800 but maybe 1600 if needed. Using raw there really isn't any other in-camera setting you need as they can all be adjusted or edited in DPP4 but to get a good viewable image you may want to set WB to daylight. If P mode isn't doing the job try switching to Av mode and set your aperture yourself. Whatever don't go to any setting on the so-called auto side of the mode dial.
