how do I prevent the scanning software from adding the date to the saved file name every time?

Greetings,
Time and date of a file (when saving) is a function of the operating system.
Is this what you are referring to?

Yes.. With my previous Canon printer/scanner I had the ability to "uncheck" the date option.
So now.. If I scan a page, save the file and call it John Doe...
When it's saved the file is now called John Doe2019.0513_0001.pdf
Is there any way to not include the 20190513_0001 part?
I am using Windows 10

Actually, you are referring to the naming convention of the file after a scan is created. This is not part of the OS. Hopefully the steps provided above will allow you to remove the date from the name being saved as default.

To remove the time and date stamp from the scans perform the following steps:

Apologies for not being more precise..
If I scan a page and name it John Doe..
When I save the page to the C: drive (or Desktop), the saved page shows as John Doe_20190514_0001.pdf. I would like to remove the date & page naming configuration from the saved page name...
I just want it to look like: This PC>Desktop>John Doe.pdf..
Not This PC>Desktop>JohnDoe_20190514_0001.pdf
