Canon Pixma ix6820 not allowing “high quality” print on plain paper anymore?

Im so bewildered??  My printer was fine and then one day it just decided it was going to print high quality on plain paper anymore. Its only letting me print high quality if I put it on a photo paper setting, but Ive never had to do this before. I have no idea how to fix this or bring it back?  I have a small business where I sell paper goods and I kind of super need it to run like normal. This printer is only a few months old so I have no clue why it would be freaking out

What version of Windows is installed on your computer?

If you are using a Mac, what version of OSX is installed?

Same issue! I'm using Mac Sonoma 14.5.  I have deleted the printer, reinstalled, deleted the folder in my library , reinstalled drivers, restarted my computer, made sure photoshop was updated and everything...all of the sudden I can't change printer quality settings.  Help!!
