I recently learned how to set my comptuer as a monitor for live view shooting. But all of the videos I watch on YouTube show the user changing the ISO, FSTOP, etc. However, when I launch EOS Utility with my T6i, it doesn't allow me to change these settings on the screen. I also don't have the option in video mode on the camera. Any idea why?

Well I don't do video and don't have a T6i but I think a good start would be to take the mode switch off Auto in put it in M mode.

This is a zombie post. Check the date. Most likely, a moderator moved it from another category, which can cause the thread to rise to the top.
