Hi, I have just bought the canon R5 mk2, I like it, but as the colour does not display correctly in Windows photo viewer, I wondered about colour space, I use sRGB colour space, and edit with DXO photo lab, I it worth shooting with Adobe RGB? I wasn't using it, as I had assumed that was for people using Lightroom and Photoshop. I struggle with some of the tech stuff.

The problem you see is due to Windows Photo Viewer. The current version in Windows 11 automatically "enhances" your images, and in many cases it does a really bad job. Unfortunately Microsoft removed the ability to switch off this enhancement and so you are stuck with it. In my experience it is worse with RAW images than JPG.
The way to get your images to look as you expect and the same as on the camera is to download a copy of Canon Digital Photo Professional software. Go to the Canon product page for your camera https://www.usa.canon.com/support/p/eos-r5-mark-ii and then select the Windows OS and version to match your computer then scroll down to get the download link for Digital Photo Professional.
