T6 Video - Can I manually set shutter and aperture?

I am using a Canon T6 to shoot some video. I cannot find any settings that will allow me to set shutter speed and aperture. Is this possible in video mode? If not, what does the camera default to? Thanks!

If not, can anyone recommend a good hand-held stabilizer for the G30? I'm also interested in the XLR audio rig that comes with the XA20 - but if my memory is correct the XA20 handle does not work on the G30...?  Any help would be appreciated.
