Hi -- I just got a new G7X on a recent trip to Japan along with a SanDiskUltra 40 MB/s Rating 10 64GB SD Card. I reformated it in the camera.
About 1/2 of still shots and most video files are corrupted. The yellow 'operating' light flashes for a long time before displaying a video and video recording stutters after 10 secs of recording -- every time. I didn't get a 4K rated SD card, but I'm now wondering if I should have done? Any ideas?

Of course, you must use the recommended type of memory card. It does make a difference. Pray it's the card, not the camera.

Could be a defective card; the specs you listed are appropriate for the camera. Try a new card.
