How does one remove a stuck adapter from canon'c angle finder C?

I think you'll need to provide more info & maybe a photo to get some opinions.

There's no positiive latch, catch, or release mechanism.  The camera adapters (Ec-C and Ed-C) are only held on by friction (though they are quite snug).  

Make sure you are sliding it in the correct direction.

Most guys complain that it won't stay on! Not that it is too hard to remove. Perhaps someone did some m

"minor" alterations to make it attach more firmly. Otherwise it simply pulls off. (2 little metal spring clips)
