Hi,
Is there some software I can use to transfer an image to an EOS R8? I would like to use an image taken with a different camera to set a custom white balance profile.
Or is there a specific format I should use for JPEG files? For example, does it need to be sRGB or have an embedded colour profile?

The image for white balance needs to be captured by the same model of camera and not be edited.
Ultimately each camera model has a slightly different response to colour - more so between different brands. If you want to set multiple cameras to the same white balance then it might be best to select a suitable Kelvin temperature.
