Saving custom picture settings on my EOS SL1 100D

So I rarely like the look of a picture with a flash.  It never seems right to me as opposed to a shot with it all in natural light.  So I go though my settings say, in Portrait mode, and I have to turn off the flash manually.  How do Isave these settings so I don't have to do it EVERY time?

Also, my manual says I should have a "candlelight" option icon but that doesn't seem to be available on my unit.

Portrait Mode is a pre-programed setting that selects certain camera options. You cannot change it.

So it sounds like there is no way to save a customized setting in any mode?

Also, the section you posted about SCN mode, I show everything BUT Candlelight.

No way to save.

I don't have the SL1, so can't try it. But I do see manual says can't use LiveView or flash. Perhaps that's the issue?
