First, what shooting mode is the camera in? You need to be in one of the Creative Shooting modes to see the full menu system. This will allow you to see the “Custom Controls” menu.
Put the camera into M shooting mode. Press the [Q] button. One of the icons is for “Custom Controls”. Go into that option. The “Custom Controls” section in the manual tells you what to do from here.
