Missing "Customize Buttons for shooting" on R5 Mark II

I am setting up my Canon EOS R5 Mark II for diving, and need to reassign the mode button. In the Ikelite video and in the user's manual, I see 7 menu functions in the green menus for page 1/4 (although they are not always in the same order--even on the same page in the user's manual). On my camera, I only see two: "Touch shutter" and "Multi function lock". How do I enable the other five menu options?

Is the camera set to Auto mode? If so the camera menu won’t display all the menu options.
