hey there. an amateur here. some time ago i bought a canon eos m3, and shot with auto for the most times. ive been trying to shoot manual for a while now, but the problem is whenever i try shoot manual, it always take 3 photos in a single click no matter what. i already set the "one shot" option and looked for solutions online but cant seem to find any. can someone please help?

Sounds like you've enabled AEB (Auto Exposure Bracketing). See page 63 of the User Manual for details. Here's a screenshot of that page with the instructions on how to turn that off/on:
