Is there a list of functions that can be saved in the custom shooting modes C1 C2 and C3 for the R7? For instance can I save the setting for aperture priority, shutter priority, etc.? IOW can I have a custom set so that when I select it it automatically comes up in Av or Tv or even manual? Is there some indicator that would show if it's in Av mode for instance?
The manual isn't clear what all can be saved in the custom modes.

Pretty much everything is saved. Since you are an EE, it is like a saved setting on a piece of equipment, an "instrument state".

Thanks for the quick reply - perfect explanation. This is one of those things where the Canon docs don't say a whole heck of a lot on.

When you register the settings to the custom modes, the camera current configuration is basically copied to the memory for the chosen custom mode. So if your camera is currently in manual exposure mode with 1/125, f/5.6 ISO AUTO, servo AF, eye detection, high speed drive, monochrome picture style then all those will be saved as part of the custom mode. When you select the custom mode, you will see on the camera LCD that there's a small subscript letter to indicate the mode. On a brand new camera reset to factory defaults then you see C1 P, but if you had the mode set to M when registering the custom mode, it would be C1 M.
Once you select the custom mode, you can change settings as you like - except the mode. However unless you also enable Auto update settings at the bottom of the register custom modes menu, the changes will be lost when the camera is switched to a different mode or powered off.

Thanks for the more detailed description especially what I'll see in the screen. There could be a better description of this in the downloadable big manual.
