Merely "plugged in", or do you mean when something is connected to the other end, too?
What does your instruction manual say about it?

If you plug in an HDMI cable camera assumes you want to display on TV so it shuts off LCD.

It does display on the TV (though not camera) but then it doesn't convey audio - through either mini USB/RCA or HDMI. Is there a setting to fix these problems?

Those are not "problems", not at all. I'm not sure if the T5i even has "Audio Out". First and foremost, it is a still photo camera, not a video camera, which is a different device from a camcorder.

I've been viewing YouTube videos to monitor headphones. Several explain how that can be done with the mini USB out to RCAs to a mini plug (sometimes with an amp between).

Canons appear to be used in some of those videos. Also if you're not able to send audio through either of these cables, why do the ports exist?
