I'm going to be in New Mexico next week for the hot air balloon fiesta. I need help with my settings and which camera lenses to use in order to take clear and colorful pictures there. Please help!!

You are too late. The Fiesta is this week. We just watched the Mass Ascension over the weekend.
That said, P mode has worked fine for me.

As for lenses, my 18-135 was great for general walking around, while the 70-300 is handy when you are shooting balloons kinda far away *outside* of the park.

Oh, and BTW, Albuquerque will have a front row seat for the eclipse this Saturday mid-morning. The tram and crest will be really crowded, but I had good luck at the dam north of Montgomery on Juan Tabo. Make sure to get a solar filter!
