Unable to select the option on the left side of 1 point AF (the very left one)

This sounds like you have limited the selectable AF areas.
I'm assuming that when you go to select the AF area the display looks like this one, with the spot AF option greyed out to the left of 1-point AF.
This is the screens from my EOS R6 Mark II, but it is very similar to the EOS R8 menus. If you navigate to the option to Limit AF areas, you can then choose which AF areas are accessible. Firstly if there is an asterisk shown, then it means some AF areas are not selectable. I am pretty sure yours will look like the second screen with no check mark above the spot AF point.
For my camera I choose to only use three of the AF areas for almost all my photography, so mine looks like this. And then below is the corresponding display on my camera with only those three choices available. I do this since it means I work with the AF areas that work for me and the way I shoot, and also not only does is avoid me using one of the less suitable areas, it's much faster to change between my preferred options.
Using customised buttons I also reconfigure the AF point selection button as a direct AF area selection button. This means that each press of the button cycles to the next of my three preferred AF areas.

What lens do you have? Not all lenses support all focus points.

I attached both R and EF with adapter lenses. Unfortunately that doesn't solve the issue. I believe it's a matter of setting.
