My Canon Rebel SL3 is currently having problems when using a third-party AC adaptor

it keeps shutting down quite randomly when sending the video signal via HDMI to a computer and using it in OBS Studio, there seems to not be any camera configuration that corroborate the process of transmission (acording to some YT tutorials about similar problems), so I'm currently looking for any help or suggestions to make it work in a regular basis.

Cameras shut down because the auto shutdown time is reached and it has not been disabled. The also shut own if the internal temperature gets too hot. This can happen with video modes even when outputting a signal over HDMI for external recording or streaming. Sending 4K clean output will generate more heat than FullHD.
It could also be your third party adapter that is the problem. Certainly Canon only checks its own DC couplers with its cameras.

The auto-shutdown time is disabled, though it may be a heating problem, there's a way to monitor that?

To establish that this is an issue with the camera, rather than the 3rd party adapter, you would need to do some testing to check the energy flow into the camera - the issue may be variations in the energy input causing the camera to overhead, and if it is you are risking seriously damaging your camera. Honestly, I would never, ever use a 3rd party power unit - if the camera is damaged by the power unit, and Canon can tell, you have voided your warranty. The risk is too great IMHO.
