I don't think you can disable it. Although it is a movie indicator, I think it is displayed all the time when the LCD is active for live view since the R5 can go right into movie mode with the press of the movie button, so no need to actually use a switch or switch it to movie mode with the selector.
Per page 362 & 363 of the R5 users manual, ver. 1.6.0. Also, switch to movie mode and check "Shooting 8" menu to make sure I didn't miss something 🙂

That is a good diagram of the icons, but you can not control each icon. You have to do it in chunks. You can control what "groups" of icons/info to be displayed when you toggle the Info button on the back of the R5, 6 in total (the 1.6 manual that I posted below is wrong. I just checked after 1.7.0 f/w update), but you can only select what to edit in 3, which are: 1) All top/bottom info/settings. 2) All left/right side info/settings. 3) On screen buttons. 4) Histogram. 5) Electronic level. It's basically the same in movie mode, but there are some minor differences. Yes, you can get rid of time, but at the cost of quite a bit of other info.
Pages 264 and 265 from the users manual (1.6.0). Per 1.7.0 f/w update, "blank screen" is Item 6 of "Screen info. settings".

New screen info menu from 1.7.0 manual. Just the addition of "Blank screen", other selections are the same.

Time Code isn't one of the items under Shooting Info Display. I was trying to use the Info button on my body to toggle this off/on, but the Cinema OS menu is very different from the movie menu on my R5 C. So no dice here. 🤔
