Can I set Zone AF as Default on Canon 7D?  If so - how?

I think you just select it. It should remain selected until you change it.

The 7D does not have Zone AF modes.

I’ve enabled this mode, just inquiring if I can make it default.

My intent - improve the auto-focusing in most prevalent use.  

It does, as shown in the linked document. It is just different than newer cameras.
