Since using the adapter with EF lenses on a EOS R6 II moves the lens further away from the sensor, does the minimum focusing distance decrease?

No the adapter places the DSLR lenses at the same distance from the sensor as they would be when fitted to a DSLR camera. So there is no change to the focus range.
The adapter has two functions:-
Convert the EF/EF-S lens mount and connectors to the R mount
Space the EF/EF-S lenses the same distance from the sensor as they were designed for.

Nope, because with the lack of the mirror box, an RF lens is closer to the sensor anyway. The adapter simply adds back the distance of the mirror box.

Interesting thought but if it did change minimum focus it may cause a loss of infinity focus. In photography you always give to get.
