Are Canon lens now interchangeable with all their cameras

Not really.

 

A crop-sensor camera like any of the Rebel line will accept any EF or EF-S lens.

 

A full-frame sensor camera like 5d, 5D3, 6D, 1Dx cannot take EF-S lenses, but only EF lenses.

 

Some of the very old Canon lenses (pre EF)  have different mounts and won't work at all, at least not without some kind of adaptor, and then you lose autofocus.
