setting grayscale printing from my iMac to my mx920.

I can seem to find anyplace that will allow me to set my canon to default to grayscale, nor to set it for one document. I see that grayscale is set to off, but cannot determine how to change this setting from the imac nor the printer.

Help! I'm wasting a lot of ink.
