I try to pair my Canon D80 over wifi to my Mac through the EOS utility. It gets to the point where the camera instructs me to start the eos utility. The utility comes up without the launcher as several youtube instruction videos show and I cannot complete the pairing. I have the latest eos utility - 3.19.0 and the mac has Sequoia 15.3.2. does the software work for this case?

Greetings waynedrobinson,
I am sorry to hear that you are having issues with completing the set up between the computer and the EOS 80D camera. Per your post, let's check to see if installing EOS Utility 3.18.41 for macOS helps resolve the issue since we can confirm that there are no compatibility issues with this version and macOS Sequoia. Please ensure you remove the current version that you have installed. On the product support page for the EOS 80D camera for downloading the software, please click on the "Load More" option on the bottom of the software list in case version 3.18.41 is not shown right away.

Greetings,
If you are using a cable to connect, please ensure the camera's Wi-Fi is disabled.
While following NatalyaP's instruction, you can also try opening Image Capture and see if the camera appears there? Having an up to date copy of the EOS Utility is always a good idea.
If not, your MAC is not detecting your camera and it will not appear in the EOS Utility. It might also be the cable or port you are connecting to.

Well, I cannot reply to the 2 of you below - I hit reply and it immediately shows an 'accept as solution' button - very strange, but I can reply to myself. So, I took NatalyaP's advice and got EOS Utility 3.18.41. This version did put up the launcher interface, but after going through the camera wifi pairing steps and setting the password for the camera on the Mac's wifi and starting the utility, the launcher comes up and I clicked the EOS pairing software button - this only showed an interface with nothing I could be change. So, a step further, but no pairing could be accomplished. 3.18.41 has the 'feature' of displaying the EOS utility launcher with no way to get beyond it to the utility itself - so no ability to change destination folder or other settings. As it stands, in total, the EOS utility 3.19 seems to be the more usable version even though it can't do wifi paring (3.18.41 can't either as far as I can see).
