I just purchased a SanDisk Extreme Portable SSD (2TB) storage device thinking that I could connect it directly to my R-7 and download photos from card. I'm trying not to have to take my laptop on an upcoming trip. Doesn't seem to work.
Anyone have any thoughts, ideas or experience with this?

I would question if the camera will have the ability to power a SSD. They normally have to be attached to computer or laptops that have a powered USB port.
Furthermore, the camera's file management system is considerably more primative than that of a computer, and is designed to engage with a computer's FMS, as a passive storage source, but not initiate its own controlled interface with a large external storage device.

I would look to see if you can get an adapter for your phone that will allow you to connect the Sandisk 2TB drive and an SD card. I have something similar for an iPhone. With this you should be able to copy from the SD card to the Sandisk 2TB drive.

I have never seen anything that would lead me to believe that you could just plug a hard drive into a camera to off-load images.
Canon used to have something called the "Connect Station" that would do something like this, but I guess the 3 people who bought it, didn't like it and it appears to be discontinued.
