Well, in the short term, until you can get it figured out, you could stop shooting in Raw, and just start shooting in high quality jpeg.

On my camera (a T8i), when I press the * button, it locks the exposure, but only holds that lock for about six seconds. If I press the AF-ON button, it will hold that lock for as long as I continue to press it.

I'm not an expert, so I can't speak with any real authority, but two thoughts come to mind:
1) If you want to exceed 30 seconds, don't you have to be in Manual and go into Bulb Mode?
2) Do you have a maximum set for your ISO?
