Just out of curiosity, and this may be more trouble than it's worth, but have you tried tethering over Wifi?
Here is a video that shows how to do that with EOS Utility, and it looks like person is using an R6 Mark II.

Ah. So in both electric and mechanical shutter modes, your camera won't take a burst of shots. It sounds like the problem is in the high speed continuous setting. Does low speed continuous work, where it takes like 3 shots per second?
