My T8i shoots videos in mp4 format, which, as I understand it, is a compressed version, sort of like a jpg.

Not all lenses support Lens Electronic MF.
According to this page from Canon, the 800mm is not compatible with Lens Electronic MF.

I guess you could.
Just put your camera in AF Servo mode, and if you hold down the AF-ON button continuously, and don't let go, it will keep focusing as you follow the plane.
