Escargot typically refers to specific species of land snails that are cultivated and prepared for gastronomic purposes.   Common species used for escargot include Helix Pomatia (commonly known as Burgandy snail) and Helix aspersa (known as Garden snails or petit-gris).  These species are chosen for their taste and texture.  Escargot snals are typically farmed through a process through a process known as heliciculture.  They are fed a diet of grains and vegetables which helps them grow and develop.
