I just got a new Mac mini with Mac OS 15.2 and a new DR-C225 II Scanner. I installed the driver which is supposed to be compatible with MacOS 15, but the scanner doesn't show up anywhere and the CaptureOnTouch can't find the driver it says. Should it work??

I had same issue on my DR-C225 so I'm assuming this is most likely yours issue as well. Turn off your scanner. On your Mac open Launchpad. Find and select CaptureOnTouch icon. This will launch the scanning window. On the toolbar select CaptureOnTouch/Settings. This launches the Environmental Settings. On the Basic Settings tab, select the option Launch CaptureOnTouch when scanner is connected. Close out of any CaptureOnTouch open windows. Turn on scanner and this should launch the scanning window. If not, disconnect scanner from Mac, reboot Mac, reconnect scanner and try again. Hope this helps.
