My wife has a desktop computer and I have a laptop. How do we setup our Canon printer to scan documents to our respective computers? Our Canon printer replaces an old HP printer which recently died.

Did you read the User Guide and online manual?

Hello!
Your printer should have come with a "getting started" or "quickstart" guide that includes a link to install the software on your computer(s). If you no longer have that, you can get the software from our site HERE. When you go to the site, expand the "Downloads" section. The site should automatically recognize if you're using Windows or macOS. If not, select it from the drop-down, and then select the version (Windows 11, or Sequoia v15). From there, you'll see a list of software populate. You want the "Master Setup (Windows)" or the two recommended downloads for macOS - one is for scanners, and the other is for printers.
If you need one-on-one help, please register your printer at https://canon.us/account and give support a call during business hours.

Greetings,
The requirements for PC or MAC is basically the same.
The Canon support team would be happy to help you.
If you are comfortable setting up on your own, I have included images for my configuration. I have some of my frequently used destinations saved in the printer's address book.
Example, Rick's Desktop
Behind that entry is a path to a folder destination on my PC. I have allowed permissions for the user specified to save scanned documents to the folder. "CORSAIR" is the hostname of my PC. I think you can use an IP too if I recall. I use a name since the destination uses DHCP.
Sharing a folder on MAC is similar. Open the Apple menu, Select System Preferences > File Sharing. Select the folder you want to share (or create one) in the user's home folder. Set the permissions.
Its path will look similar to (example) smb://[hostname]/[username]/[foldername]
if the name of my MAC was RicksMAC, the user was Rick and the folder was scanned_documents...
smb://ricksmac/rick/scanned_documents (you'll need to enter the path for your situation)
Hope that helps. 😃
