when I press the shoot button the shutter clicks three times then reocrds the shot? How do I stop this?

You must be shooting in burst mode. Switch to SINGLE SHOT.

A810 I don't quite know the mode as I keep hanging them and it still does it.

If you have been changing the modes and dont know where you are then I would do a reset of the camera to put it back to its defaut settings.
The burst mode has a icon of 3 "windows" stacked on top of each other. Like this:
