I am using my PowerShot SD1000 camera mounted to my bicycle to record bike rides. What are the best movie settings to get the crispest video possible?

While exposure settings can have a significant impact on image quality, they pale in comparison to the major impact that lens quality has.
I recommend setting the camera to the factory default, automatic mode. Your video resolution is 640 x 480, so you may already be looking at the best that the camera can do.
