canon 7095, booklet w/stitching, 8.5 x14 paper size, 7 X 8.5 by finished booklet size. Possible?

We can not find the option for 7 X 8.5 finished booklet size with the printer driver we have installed. A custom size option is available but will not allow the 7 X 8.5 size to be entered. We have both a 7095 and 7105. Neither machine drivers will allow it. All earlier Canon machines i. e. Canon 105 and 600 did allow this option. Can anyone help?
